We keep whole milk, but lower fat milks, as well as skim, work. Unlike traditional rolled biscuits, we do not use cold butter. Place the homemade biscuits for on the middle oven rack at 450 degrees for 15-17. Drop the biscuits onto the prepared baking sheet or a cast iron skillet about 2 inches apart. In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, sugar, and salt. Line a 13×18-inch baking sheet with parchment paper. Salted butter-this adds salty flavor, as well as fat to the biscuits. Using a large cookie scoop or two spoons, spoon out about 1/4 cup to 1/2 cup of biscuit dough. Preheat the oven to 425F and set an oven rack in the middle position.Kosher salt-I like to use a medium-grain kosher salt for recipes like these.It’s not necessary, so you can skip this, too. Granulated sugar-for just a touch of sweetness.Baking powder-this is our leavener, which causes the biscuits to become fluffy and rise in the oven.I have not attempted this recipe with a gluten free flour blend and do not recommend it at this time.
